Creamy Black Bean Chicken

I stumbled on this recipe early this spring.  It’s a hit at our house.  The kids like it, visiting kids have raved about it, it only has 4 ingredients, and, as a crock-pot meal, it keeps our kitchen cool. 

Creamy Black Bean Chicken

1½ lbs. boneless chicken
1 small jar salsa
1 can black beans
8 oz. block cream cheese

Place chicken (I have always put it in frozen), salsa, and black beans in crock-pot.  Cook on low for about 6 hours.  Just before serving, stir in cream cheese.  Yep, that simple.  We usually eat it over rice, but it’s also yummy eaten as a dip with corn chips or fritos.
